This is my hubbies recipe, I have no idea where he got it from but he has changed it. The original recipe called for the egg yolks to be used. He forgot once to add them and we found the mousse to be even nicer this way round!
This will serve 6 “healthy portions” (or 3 normal sized portions if you are greedy like me!)
You’ll need 6 small ramekins
225 g of dairy free chocolate (the darker the better)
4 large free range eggs
(you only need the whites so maybe for dinner do some homemade sausage rolls or other pastries and use the yolks to brush the top of the pastry to make it golden and shiny)
1 tablespoon of margarine (like vitalite or pure…)
Gently melt your chocolate, either in a bain marie or in the microwave.
But be careful chocolate burns really easily in the microwave, be sure to add 3 or 4 spoons of either water or dairy free milk and do in short bursts stirring often.
Once melted stir in the marg until it has melted in.
In a clean bowl whisk your egg whites until they form soft but firm peaks. You should be able to hold the bowl over your head and the eggs not fall out!
Fold the egg whites into the melted chocolate (apparently with a metal spoon, though I have no idea why!)
and thats it! fill your ramekins up, cover with cling film and pop in the firdge to set.
For a surprise treat you could add some yummy fresh and ripe raspberries in the bottom of the ramekins before putting the mousse on top. Or for an easter twist add some dairy free mini chocolate eggs on top of the mousse!
