I can’t remember where I got this recipe from but it is one of my favourite dairy free cakes. It is moist and yummy and lasts for ages.
Ingredients: 175g light soft brown sugar 175g flour 175g grated carrot 175ml sunflower oil 3 bananas mashed (I like them very ripe) 3 free range eggs 1 teaspoon bicarbonate 1 teaspoon salt 2 teaspoons baking powder
Preheat the oven to 170C
Grease the tin (i used a 20cm square tin with the bottom that pops out)
Mix the eggs and sugar together well, then add sifted flour/bicarb/Baking powder/salt and mix
Add Oil and mix in (might look a bit like its splitting but keep at it and it’ll blend in)
Then add mashed banana and grated carrot
Pop into the tin and cook for an hour to 1hr 1/4 (depending on your oven really. Pop a skewer in and if comes out clean its ready. Let it cool and pop out of the tin.
It is the moistest cake ever.
you could add walnuts for texture and taste (about 175g). I dont. I like it allergy free! :)
