Dairy free cookies were my saving grace last week, without this recipe I might have succumbed to temptation :)
After the girls had those Choc Chip cookies from the shops last week and my will power was seriously tested I decided I should just make some dairy free cookies for me to enjoy too! There were a thousand and one different recipes online to try out, some more complicated then others, and I look forward to trying as many as possible. But I decided to just go with my old butter recipe, surely I could adapt it!
To keep it simple, I just substituted the ingredients with dairy free ones and it worked a treat. I’m sure a bit more tweaking could improve them but we enjoyed them as they came :)
- 200g Dairy free marg (I used Pure Soya Spread, any otherdairy free margarine will do)
- 180g Soft brown sugar
- 350g Self raising flour
- 3 “heaped” Tablespoons of Golden Syrup (just because it’s dairy free doesnt mean it’s not a little naughty!)
- a bar/tablet of Dairy free chocolate chunks (I just chopped up some dairy free chocolate, should use about 200g, you can also use raisins)
Mix the marg and sugar until soft and well fluffy like! Then mix in all that yummy golden syrup.
Fold in the flour. And then the chocolate.
Finally mix in the “milk” until its all well combined.
Dollop spoon fulls of the cake mix onto your baking tray (either greased with a little oil or marg), make sure to leave room for the mixture to “melt” into a cookie shape!
Cook for about 8/9 mins at 180 (i like to keep an eye on them whilst cooking as i find the temperature and length of time tends to vary by a minute or two)
When you take them out of the oven they will be hot and soft, gently press the top of them with the back of a tablespoon and then leave to cool.
We certainly did, although I didnt have quite enough chocolate when I made them (the naughty midnight snacking mouse had been at the chocolate bar the night before he he), so shall add more next time and may also try making them with Cocoa powder so as to make double chocolate chip cookies!
